Artificial drying of cocoa beans and acidity
Les cacaos malaisien et indonésien sont pénalisés sur le marché mondial à cause de leur trop grande acidité. Celle-ci provient essentiellement d'un excès d'acide acétique formé lors de la fermentation et d'un séchage artificiel inadapté qui empêche son élimination au cours de cette étape.
