Determination of triacylglycerols (% w/w) in animal and vegetable fats by gas-capillary chromatography

  Study of triacylglycerols (TAG) by gas-liquid chromatography (GLC) employing a capillary column is an efficient technique for the determination of certain quality parameters of fats and oils. For example, it enables the determination of the authenticity of the milk fat in milk and dairy products and the genuineness of olive oil. In this study, chromatographic conditions are described that provide well-developed peaks of TAG of low molecular weight (C28 to C32) up to high molecular weight (C34 to C54). Profiles were obtained from the oils from: peanut, canola, sunflower, maize, olive and fish, and the fats of; raw milk, pork and beef.
