Certification bringing the added value to the market

More sustainable food production methods clearly provide an added value to society in comparison with traditional methods of farming. However, the question is: “value added to what?”. In this contribution, recent developments in certification are analysed against a historical background. These developments will be related to organic and integrated food production.
