CFC/ICO/FAO Mould reduction project in selected coffee-producing countries

This paper summarizes the status of mould reduction projects in some coffee-producing countries. The main points outlined are: identification of optimal processing conditions; identification of ochratoxin A-producing species and possible competitors; identification of critical control points for mould infection and ochratoxin A formation in green coffee; improvement of analytical facilities in participating countries.
