Atividade das polifenoloxidases, enzimas pectinolíticas e qualidade do café (Coffea arabica L.) mantido por diferentes tempos {hooka} espera da secagem

Coffees (Coffea arabica L.) from the cultivar Catuaí Vermelho were harvested in July 1st 1998 in Carmo do Rio Claro region in the estate of Minas Gerais, fruit of a same plot, containing, on average, 53,8 percent of cherry, 23,14 percent seco/passa and 22,96 percent of green fruits were utilized. After harvested, the coffee was separated into lots of 180 liters of fruit for each waiting time and divided into three replicates of 60 liters of fruit each one, those fruits were bagged in trancados polyethylene bags and arranged on the yard for different times ranging in 0, 1, 2, 3, 4, 6 and 7 days, afterwards drying on the yard itself was proceeded till the grains reached 11 to 13 percent of moisture Next, a enough amount of sample was withdrawal for chemical and qualitative analyses with the lengthening in the waiting time after harvest, a decrease in polyphenoloxidase activity occurred with a indefinite range in the activity of pectinmethylsterase and polygalacturonase.
