Alteracoes da qualidade de graos de cafés (C. arábica L.) colhidos no pano e no chao, provenientes de sistemas de manejo orgánico, em conversao e convencional

The influence of the production system and harvest type was significant in all the measured variables. It is stressed that sweeping coffee presents poorer quality, these associated with higher contents of total phenolics (percentage) and titrable acidity (mL of NaOH 0,1N/100g of sample). The system in conversion was of poorer quality even being harvest on the cloth. The conventional and organic systems showed better performance when harvested on the cloth, however, it points out differences as to the higher concentration of reducing (percentage) and non-reducing (percentage) sugars in the conventional system and greater polyphenoloxidase activity (U.g-1), caffeine content (percentage) and total (percentage) sugars in the organic system.
