A simple method is described for the determination of caffeaylquinic, feruloylquinic and dicaffeoylquinic acides in green and roasted coffees with use of a reversed phase system and aqueorus eluting solvents. Results obtained on a number of Arabica and Robusta green coffees and on Arabusta coffee are given. Changes during roasting have also been monitored
