Moulds of commercial cocoa and their infection origin in farm processing cocoa in Bahia, Brazil

Studies were carried out at the Centro de Pesquisas do cacau - CEPLAC, Itabuna, Bahia to determine the moulds occurring in commercial cocoa and the relation between moulds existing inside and outside of bean, to correlate their incidence with bean moisture content and ecological factors and finally to ascertain their infection origin in cocoa. Commercial cocoa of four warehouses of local buyers and licenced buying agents were examined during various periods of storage, and at different places. The mould infection was determined in the beans collected during farm processing in 25 cocoa growing farms located under different ecological conditions. The moulds were generally associated with delay in drying in sundryers "Barcacas". A list was compiled of the species of moulds isolated and identified in bean samples under consideration. In all cocoa of various sources of different operations, several fungi were found in the bean shells. Penicillium, Aspergillus and Syncephalastrum were the dominant genera of the mould population and appeared consistently in the bean shells and in dehusked beans. The poor installations and bad handling of cocoa during farm processing favour the infection of moulds in cocoa. To avoid the mould infection during farm processing it is necessary to dry the beans in good mechanical dryers to supplement sun-dryers. The storage should be made in well constructed warehouses.
