Yield of carcasses in Bolivian Chaco Creole Cattle (Camiri - Province of Cordillera - Santa Cruz - Bolivia): Paper presented at the III Ibero-American Symposium on the Conservation of Local Animal Genetic Resources and Sustainable Rural Development

In order to determine the performance of the carcass in Creole cattle, a study of 456 animals slaughtered in the slaughterhouse of the Camiri Cattlemen's Association (AGACAM) was carried out. The classification of the carcasses was done in the airing room of the same slaughterhouse under the Montgomery classification system, during the months of February-April 2002. The data were analysed using an ANAVA and ratio comparison tests. The overall results were 49.1%±0.1 carcass yield, 316.4±2.7kg live weight, 154.9±1.4kg warm carcass weight with an average age of 3.9±0.1 years. The yield to the carcass according to the stratification by animal class was: cows 48.3%; in heifers 50.5%; in steers 50.4%; and in bulls 50.5% (P< 0.001). According to sex, males yielded 50.5% and females 48.6% (P<0.001) of the total number of females (330), 60 /21%) were females in the gestation period. By age: 1-year-old animals yielded 49.9% of 1.5-year-olds 49.7%, 2-year-olds 49.9%, 2.5-year-olds 50.3%, 3-year-olds 50.0%, 4-year-olds 48.8%, 5-year-olds 48.7%, 6-year-olds 48.1%, 7-year-olds 47.6%, 8-year-olds 46.0%, and 9-year-olds 46.9% (P<0.001). According to the origin of the cattle, those of Cabezas yielded 51.7%, Lagunillas 49.8%, Charagua 49.7%, Gutiérrez 49.7%, Camiri 49.5%, Cuevo 49.1%, Boyuibe 49.0%, and de Luis Calvo 48.6% (P<0.001). According to fasting hours, cattle with 24 hours yielded 48.1%, with 48 hours 48.8%, 72 hours 49.8%, 120 hours 50.6%, 144 hours 50.4%, and more than 144 hours 52.2% (P<0.001). In the classification of the channel we observe that 8 (1.6%) classified in Excellent, 92 (18.4%) in Superior, 239 (47.8%) in Select and 161 (32.3%) in Commercial. The live weights, hot carcasses and yields of the carcasses were very low, in addition to classifying them, very few animals qualified at the best levels, also affected by the long periods of fasting they suffer before the pithing. As a whole, all these variables analyzed directly affect the economy of the producers in the Chaco area.
