Scale, milk quality, cooling and management costs in milk refrigerating tanks in the Altos de Jalisco

The objective of the present study was to determine the effect of scale (collected and cooled volume) in individual or collective refrigerating tanks in the Altos de Jalisco, on milk quality and on refrigerating and management costs. To analyze quality, a database containing the following variables recorded daily in each refrigerating tank was available, temperature of refrigeration, volume, acidity, cryoscopy, reductase, density, fat and somatic cell count. For cost analysis a survey of 15 collective and 8 individual tanks was carried out. All the information was collected between January and June, 2003. Relation among variables was studied through correlation and quadratic and linear regression models. As a conclusion, in accordance with the sample considered in this study, a significant relationship between scale and quality was found, and also between scale and average refrigerating cost per liter, in which the best quality and the higher unit costs are found in the smaller scales, that is, with individual tanks.
