Incidence of PSE and DFD muscle in pigs slaughtered in Mexico's Bajio region

The objective of this work was to determine the incidence of PSE and DFD muscle in pigs slaughtered in the Bají­o region of Mexico and its relationship with season and farm type. The study was carried out in summer and fall in 1,099 pigs from technified (TF) and non technified (NTF) farms. Animals were housed in resting pens for 18 to 24 h offering only water and slaughtered by conventional procedures using electric stunning. Measurements of hot carcass weight, pH45, pH24, L*, a*, b* and WHC were carried out. Criteria for PSE muscle was pH45 5.9 and < 6.4, for L* < 57 and > 48, and for DFD muscle pH45 ≥,,, 6.4 and L*
