CERTIFICATION OF PRODUCTION SYSTEMS AND PROCESSING OF ORGANIC PRODUCTS OF ANIMAL ORIGIN: HISTORY AND PERSPECTIVES

Production, marketing and consumption of organic products is increasing their market-share f the world food market. The establishment of standards and certification process are needed with the natural gap between farmers and consumers in the context of urban markets, like happen on cities. In the beginning of this process in the organic movement, were private organizations that created norms and stands , first for crop production and after for livestock. At present , with the growing market, governments established legislations, based on private standards. Today, on international trade level, the organic regulations are part of any future negotiation round at WTO. The low income countries must be prepared to enforce these rules to avoid that these national and international standards and legislations be transformed in trade barriers.
