Antioxidants and storage atmospheres for freeze-dried concentrated starters from non-bitter Streptococcus lactis strains

The highest viability and acid-producing activity of freeze-dried concentrated starters prepared from non-bitter Streptococcus lactis strains after storage at 4 or 20 C for 60 days were consistently achieved by the use of ascorbic acid + monosodium glutamate as antioxidant and of N2 as storage atmosphere. © 1988 Science & Technology Letters.
