Gastronomy: Trends and Digital Strategies: Art, Culture and New Technologies in Latin America and the Caribbean

This document analyzes the food value chain process with the goal of pinpointing its links with technological innovation. Providing relevant data on the impact of COVID-19 within the sector and identifying the effects of the crisis, and the technological proposals that arose and grew as a response to the crisis. Lastly it provides detailed analysis of tendencies and strategies that focus on innovation and intend to aid in the recovery of the gastronomic sector.
