Variations saisonnières de la composition chimique globale de la sardine: Sardina pilchardus (Walbaum, 1792) de la région de Bizerte (Tunisie).

In summer S. pilchardus has a high lipid and protein content and a low water and mineral content. In winter, it has a maximum amount of water and minerals and a minimum of lipids and proteins. The changes of lipids and water are very important, those of proteins and minerals are weak. The caloric value of sardine is very high in summer and low in winter.
