Data from: Degree of oxidation of sonicated soybean oil using various sonication process parameters

The purpose of this research was to evaluate the effect of High-intensity ultrasound (HIU) on soybean oil (SBO) using various sonication process conditions including different power levels, probe diameters, pulse duration and amounts of sample. The highest power density and power intensity were observed with the highest HIU setting (setting 9) with 3.2 mm tip. No significant difference was obtained in peroxide value (PV) and oil stability index (OSI). The results of volatile compounds analysis showed that the highest power intensity values were associated with the oxidation of SBO. These results showed that HIU did not affect the degree of oxidation of sonicated SBO under mild conditions.

Resources in this dataset:

Resource Title: Readme: Degree of oxidation of sonicated soybean oil using various sonication process parameters.

File Name: README.txt

Resource Description: This file contains the README (including the data dictionary) for the dataset.

Resource Title: Lipid Oxidation Data.

File Name: Lipid oxidation Data.zip

Resource Description: Brief description of collection and processing of data: Power levels were obtained by sonicator. Power intenstiy and power density were caluclated using the equation as described in the manuscript. The degree of oxidation of sonicated and non-sonicated SBO was evaluated by Peroxide value (PV) using spectrophotometer, oil stability index (OSI) using Rancimat, and volatile compounds using HeadSpace solid-phase microextraction (HS-SPME) coupled to gas chromatography-mass spectrometry(GC-MS).

Description of files: There are 3 folders.
