Methodologies for obtaining coffee extract for measurement of non-volatile compounds

Five methods were compared for extraction of chlorogenic acid, trigonelline and caffeine from fresh and roasted coffee beans. Three of the methods (extraction in an automatic domestic cafetiere, extraction in boiling water and extraction in a water bath) gave similar results in terms of extraction efficiency.
