On the activity of fungi in coffee in relation to ochratoxin A production

This paper discusses ochratoxin A-producing fungi, such as Aspergillus niger, A. carbonarius and A. ochraceus, in association with coffee or coffee production systems. The fungi and other organisms commonly found in coffee fruit and its dried product are identified. The ecological aspects of mycotoxin production by fungi are briefly described.
