Chemical composition and quality of coffee (Coffea arabica L.) collected on cloth and on the ground in different periods

Coffee (Coffea arabica) of the Catuai vermelho cultivar were harvested in the region of Lavras in the state of Minas Gerais, Brazil, in 7 different periods. Harvesting was done on 31 May to 23 August 1999, with the harvest periods being 14 days apart. In each period, 480 litres of fruits taken from 250 plants, from the same planting field, were harvested and collected on cloth. Fruits that fell on the ground were also collected. The harvested fruits were dried on cemented flat open terraces until the beans reached a moisture content of 11 to 13 percent. Three samples were then taken for the physical, physicochemical and qualitative analyses. Results showed that an increase in polyphenol oxidase activity and colour index, and a decrease in the contents of total phenolics, chlorogenic acid, acidity and potassium leaching were observed in "cloth" coffee samples. For "ground" coffee samples, variations were similar to those of the "cloth" coffee. However, higher contents of total phenolics and chlorogenic acid, higher colour index and polyphenol oxidase activity, and decreased acidity were observed for "cloth" coffee. The quality of beverage made from the coffee harvested in all the periods studied was evaluated and was considered as hard beverage.
