Influencia de la altitud en la calidad de la bebida de muestras de café procedente del ecotopo 206B en Colombia
With the purpose of determining the tendency of physico-chemical characteristics and organoleptic qualities of roasted coffee and coffee cup quality with altitude increase, and thus establishing if influence of the latter affected the drink quality, samples of coffee coming from 10 different altitudes (between 1,050 and 1950) corresponding to ecotopo 206 B, specifically to Fresno municipality in Tolima department were evaluated. The results showed that altitude has an effect on toasted coffee and cup characteristics, displaying a zone where the best quality values appeared (1,450 - 1650 m.a.s.l.) and settling down this zone like the altitudinal strip with the best conditions for coffee crops in ecotopo 206 B.
