Metodologias técnicas e gerenciais capazes de ajudar na prevencao da ochratoxina a ao longo de toda a cadeia produtiva do café

The development of new analytic methods has permitted detecting ochratoxin A at levels under 1 ppb, its presence in coffee may became a serious health problem. The refusal to import coffee with dangerous levels wold signify a reduction in exports of 4 million sacs, of which 1 million originate from Latin America. This fall in exports would deteriorate the already fragile economy. Various studies carried out by the FAO suggest that to inhibit the growth of the fungus producing to in specially the Aspergillus, one must adopt preventive measures, including IMP (Integrated Management Phytosanitary), GMP (Good Manufacturing Practices) and GAP (Good Agricultural Practices). The author suggests a method that comprises of the techniques adopted by the FAO together with a managerial method known as TQC. The HACCP methodology is explained as far as its basic objetive and holistic approach, as well as its methodological sequence which involve 9 specific steps. Only the essential aspects of the TQC methodology are presented, specially the 5 dimensions of which it comprises: intrinsic quality, cost, customer service, moral and security, As HACCP refers to health issues, it is part of a bigger picture: the Already in 1992, an important American Institute demonstrated a strong synergy that the use of the integrated methodologies could "help to produce healthier food products, and maintain reasonable production costs".
