Emergency in a coffee factory how to cope with a peak crop in a co-operative coffee factory

It is essential to process as many days a week as possible during the peak since then the factory can handle much more coffee while the management is easier. This can be arranged by dividing the farmers in 5 or 6 groups and instructing each group to bring their coffee on separate days. A factory with a 3 disc pulper and with appr. 16 fermentation tanks, 20 skin drying tables of 50 ft. x 6 ft. and 80 drying tables of 75 ft. x 6 ft. can handle 100.000 kg cherry per week if well managed. Construction of new factories should be avoided if possible since this will decrease members payment and will sometimes create labour problems. The factory should be in a perfect condition so that no breakdown occurs during peak crops. In general the existing factories should be improved and modernised, in order to handle a bigger input. "Bottlenecks" in the processing should be traced and steps taken to avoid them
