A concurrent intermittent parchment coffee drier
A concurrent, intermittent parchment coffee drier (CIPCD) prototype was constructed and evaluated in three experiments with 1200 kg of washed beans with initial moisture content of 54 per cent, wet basis, or 117 per cent, dry basis. Performance comparisons of the coffee drying process were made with the only mechanical drying system being actually commercialized in Colombia, the fixed bed parchment coffee drier (FBPCD). The final moisture content of the CIPCD presented a coefficient of variance half of the FBPCD. Air drying temperatures up to 108 centigrade grade were used in the CIPCD, originating a product of regular appearance but with good cup quality. However, maximum air temperatures of 90 centigrade grade originated product quality similar to the sun dried beans. Total drying time for the CIPCD is in the order of 25 hours. The thermal drying efficiency and the variable and total costs were favorable also to the CIPCD. These advantages, plus the minimum horizontal space requirements and the easiness of loading and unloading of the tower drier, should be sufficient for its rapid commercialization. A commercial, 3.5 times bigger drier is being evaluated at a cooperative processing plant
