New ways of industrial coffee processing

Dried coffee beans, the so called green coffee, are the classical raw material for the production of industrial coffees, roasted, instant, decaffeinated. Fresh coffee beans, with their natural water content, have been proposed as starting material for decaffeination. We have obtained good results in the decaffeination of fresh coffee beans using temperature programmed caffeine extraction with supercritical carbon dioxide. In this way the thermal and general stress imposed to the raw material is considerably reduced. The cup characteristics of decaffeinated beans are almost the same that those of the starting coffee. Not only for decaffeination are fresh coffee beans a potential alternative raw material to green coffee. Green coffee extracts can be obtained from fresh or green coffee. These extracts can be used for producing instant coffees roasted and unroasted, decaffeinated or not. The cup of the roasted green coffee extracts could be superior to that of classical instants, more close to that of regular. Unroasted green coffee extract can be employed to develop new exotic coffee based beverages, for example, together with fruit juices. The introduction of dried green coffee extracts as raw material has several advantages in industrial coffee processing, handling and storage. True continuous processing is possible, the rationalization of energy consumption is feasible. Waste material is opportunely discarded at the beginning and not at the end the global process operations chain
