Uber phenolische substanzen im Kaffeewachs

The coffee wax covers the bean just like a thin very adhesive outer envelope. It is almost totally recovered during extraction along with the essential oil of the bean. Studies made of this, show that all the external envelopes of green coffees of different varieties and having undergone different treatments, contain phenolic substances having a powerful antioxydizing action. These substances are divided into eight constituents by thin-layer chromatography, and form together with Gibbs' reagent a deep blue dye. It is shown that colour reaction is suitable as an indicator of coffee wax and that it also makes possible a qualitative as well as quantitative valuation of raw and roasted coffees
