Structure du mascaroside principe Amer de Coffea vianneyi

Mascaroside C26H36O11, a bitter principle, was recently isolated from the malagasy species Coffea vianneyi. It was submitted to structural studies by different chemical and physical methods. NMR and mass spectra of hexaacetylmascaroside proved a glucopyranose fragment, two acetylable hydroxyls and a third one probably tertiary. A dienone chromophore is present according to UV and IR spectra, and confirmed by NMR spectrum which reveale a tertiary methyl. A direct study of mascaroside by X-ray crystallography corroborate above data and give the complet structure of the product as a pentacyclic diterpene glycoside. Cafamarine, previously extracted from C. buxifolia must have a closely related structure with only one acetylable hydroxyl
