Le sechage naturel du cacao: un noveau type de séchoir solaire experimente en Cote d'Ivoire

After devoting a chapter to the phenomena which occur during the drying of cocoa in the sun and their influence on the quality of the product, a second chapter shows the principle and origin of the so-called "rocking" drying tried out in the Ivory Coast. The next chapter is on the detailed study of the drying process and its application in practice. Lastly, emphasis is laid on the potential of this new technique of natural drying in relation to the organoleptic and commercial qualities of cocoa treated in this way
