Physical properties of interesterified palm oil/palm oil fractions with other vegetable oils

Attempts to prepare mixtures of fats and oils containing palm oil and/or palm oil fractions which simulate 'vanaspati' were made. Many mixtures were subjected to interesterification and the physical properties of the products investigated using nuclear magnetic resonance (NMR) for all the mixtures and differential scanning calorimetry (DSC) for selected mixtures. Solid fat content (SFC) curve of each mixture was compared with that of vanaspati. Some potentially useful mixtures were recognised
