Harvesting time is determined by market conditions and stem diameter. A third factor, i.e., lenght of newly growing leaves, is also relevant. Under present conditions on the international market for preserved heart of palm, 40 stems of 9 cm diameter provides the 5.20 kg of heart of palm that are needed to prepare a standard box for sale on the international market.
