The aim of this study was to evaluate the stability of individual and total flavonols (TF), their bioaccessibility and antioxidant activity in apple products, untreated and treated by HPP, and subjected to a gastrointestinal digestion in a dynamic model. The influence of food matrix on flavonol bioaccessibility was evaluated comparing the results of apple products with those obtained in a dietary supplement of quercetin. This study has been funded by the Spanish ministry and Competitiveness (MINECO) by the project AGL2013-46326-R.
