From land and sea
Many cultures enjoy mixing very contrasted things, even in gastronomy. A clear example of this custom is the surf and turf dishes. As the name suggests, surf and turf dishes combine typical ingredients from mountain cuisine with those from the sea. While savoring these dishes, few people think about the similarities and differences between marine and terrestrial organisms. Why are shrimp and chicken so different? Beyond the fact that some breath through gills and others through lungs, their differences are rooted in the foundation of the same ecosystem
