The action mechanisms of said microorganisms include: (i) the regulation of the innate and adaptive immunological response; (ii) the reduction of the concentration of toxic epitopes in the intestinal lumen; (iii) the strengthening of the barrier defense function against harmful antigens and bacteria; and (iv) the provision of enzymatic activities that promote digestion. La invención relaciona a los microorganismos para el tratamiento de las alergias de los alimentos, enfermedad específicamente celiaca, así como a los métodos para la selección de eso. Los mecanismos de la acción de los microorganismos dichos incluyen: (i) la regulación de la respuesta inmunológica natural y adaptativa (ii) la reducción de la concentración de epítopes tóxicos en el lumen intestinal (iii) el refuerzo de la función de la defensa de la barrera contra los antígenos perjudiciales y las bacterias y (iv) la provisión de las actividades enzimáticas que promueven la digestión.
