Microbiología de mayonesas comerciales.
Se estudiaron 20 muestras de mayonesa determinando la presencia de los grupos microbianos provenientes no sólo de la materia prima inicial sino también de los demás ingredientes, se determinó presencia de: Entero bacterias, Bacterias lácticas, Pseudomonas, Micrococos, Bacillus y Levaduras.. El número de contaminantes es inversamente proporcional al tiempo de conservación y después de 20 días solamente sobreviven Levaduras, en promedios que no afectan su comercialización.
