Development and composition of Corriedale lamb carcasses obtained in a traditional production system

Changes in carcass composition, regional and tissue component of 20 Corriedale lambs, from birth to 5 months of age were recorded. Feed level (running on natural pastures) management and production level are similar to the average in Uruguay. At 140 d of age, carcass weight was 12.35 kg. At 3 months of age, growth was slower due to low pasture quality. The study of carcass composition showed that break point for fat increase, was at 9 - 10 kg carcass weight. Allometric coeficient of growth of different regions were: loin/flank, 1.28; breast, 1.24: neck, 1.04: ribs, 1.04; leg, 1.01 and shoulder, 0.97. The coefficient for meat was 1.40 (fat, 1.87; water, 1.22; protein, 0.98), for bone, 0.80. The highest bone development was sternum, ribs, scapula and coxae. Carcass increasead in length by 60 %, width 76% and highth 43%. It is concluded that with this breed it is not possible to produce carcass of more than 10 - 12 kg without a significant increase of fat content, unless a selection program is established.

En este ensayo se estudian la variación de la composición de carcasas y el desarrollo regional y de tejidos de 20 corderos Corriedale desde el nacimiento hasta el destete a los 5 meses. La alimentación (sobre pasturas nativas), el manejo y los índices productivos obtenidos son similares al promedio del Uruguay. A los 140 días el peso de carcasa fue de 12.35 kg. A los 3 meses hubo una detención del crecimiento de carcasa por poca calidad de la pastura. Estudios de composición de carcasa indican que el período de transición de preengrasamiento a comienzo del engrasamiento se ubicó en los 9-10 kg de carcasa. El estudio regional indicó los siguientes coeficientes alométricos: lomo/flanco, 1.28; pecho, 1.24; cogote, 1.04; costillar, 1.04; pierna, 1.01; paleta, 0.97. Los tejidos blancos tuvieron un índice alométrico de 1.40 (grasa, 1.87; agua, 1.22 y proteína, 0.98) y hueso de 0.80. En esta etapa el mayor desarrollo óseo correspondió al esternón, costillas, escápula y coxal. En medidas lineales el largo de carcasa aumentó un 60%, el ancho de cadera 76% y el largo de pierna 43%. Se concluye que con esta raza no es posible producir corderos magros de más de 10-12 kg de carcasa, a menos que se implementen programas de selección adecuados.
