Listeria monocytogenes in carcasses of cebu bovines in a slaughterhouse of the Savannah of Bogotá (Colombia)
Listeria monocytogenes is a Gram-positive cocobacillus that has been isolated from soil, water, vegetables, raw milk, meat and meat byproducts. This micro-organism has been considered an important problem of public health especially in immudepressed and elderly people, children and pregnant women. Previous studies made in Colombia have demonstrated the presence of the micro-organism in milk and crude cheeses, as well as in milk cow conglomerates and Holstein carcasses. With the purpose of continuing the studies related to the epidemiology of the disease and its importance in public health, the actual work was made to determine the presence of L. monocytogenes in carcases of Cebu cattle, in a slaughterhouse of the Savannah of Bogotá (Colombia). Of a population of 1600 animals slaughtered in a period of two months, 120 were examined. The samples were taken of four different points (hip, skirt, chest and neck), obtaining ten (8.33%) carcases contaminated with L. monocytogenes, demonstrating the high risk of the consumption of contaminated meat for the population. To prevent contamination with L. monocytogenes of carcasses destined to human consumption, it is necessary to establish Hazard Analysis and Critical Control Points (HACCP) plans at farm level for animals bred for slaughter and, previous to and during the process of sacrifice.

L. monocytogenes es un cocobacilo Gram-positivo que se encuentra en forma ubicua en el suelo, agua, vegetales, leches crudas, carnes y derivados cárnicos. Este microorganismo ha sido considerado un problema importante de salud pública especialmente para personas inmunodeprimidas, mujeres embarazadas, ancianos y niños. Estudios anteriores realizados en Colombia han demostrado la presencia del microorganismo en leches y quesos crudos, lo mismo que en conglomerados lecheros y en canales de bovinos Holstein. Con el fin de continuar los estudios relacionados con la epidemiología de la enfermedad y su importancia en Salud Pública, se realizó el presente trabajo para determinar la presencia de L. monocytogenes en canales de bovinos raza Cebú, en una planta de sacrificio. Se examinaron 120 canales de una población de 1600 animales sacrificados en un periodo de dos meses. Las muestras, se tomaron en cuatro puntos diferentes (cadera, falda, pecho, cuello), obteniendo diez canales contaminadas con L monocytogenes, lo cual indica un grado de contaminación del 8,33% con un rango entre 3,4% y 13,2% demostrand, de esta manera, el alto riesgo que puede constituir para la población el consumo de carnes contaminados. Con el fin de prevenir la contaminación en las carcasas de los animales, destinados al consumo humano es necesario establecer planes de Análisis de Riesgos y Puntos Críticos de Control (HACCP) en las fincas destinadas a la crianza de animales para sacrificio, durante las etapas previas al sacrificio y durante todo el proceso de faenado de los animales.
