Brewing beer with honey : implications analysis and homebrewer´s tool assessment.

The use of honey as an ingredient in the elaboration of beer has not been thoroughly studied. Therefore, the impact honey can have in the brewing process may jeopardize the quality of a beer. In this study, the effect of adding honey on yeast performance, refractometer wort correction factors and the calculation of alcohol by volume (ABV %), was evaluated. For this, two common online home brewing tools were used: “Brewer’s Friend Refractometer Wort Correction Factor Spreadsheet” and Sean Terrill’s “Final Gravity Calculator”. Results indicated that for a specific recipe of beer, concentrations of approximately 5 % are beneficial for the fermentation process, by producing a higher attenuated beer. However, it was not possible to determine the concentration of honey necessary to optimize yeast performance. On the other hand, refractometer wort correction factors reduce as the amount of honey increases, therefore increasing the accuracy of the refractometer. Nonetheless, although tools such as Sean Terrill’s “Final Gravity Calculator” are easily available to home brewers to determine ABV % of their beer, it is recommended that when brewing with honey they use traditional methods of calculation for a more accurate characterization of the beer.
