Functional properties of pineapple

Pineapple is the third most important tropical fruit in world production with the varieties ‘Smooth Cayenne’ and the ‘Smooth Cayenne’ hybrid ‘MD2’ being the most commercialized worldwide. The high consumption and wide distribution has led many research groups to study pineapple's nutritional value and phytochemical content. Pineapple fruit is considered a good source of phytochemicals, dietary fiber (DF) and vitamin C. In addition, pineapple contains other bioactive compounds such as polyphenols and carotenoids that have potential health benefits. The main role of these bioactive compounds is their antioxidant, antiviral, anti‐inflammatory and anti‐cancer activities. However, the functional properties of each bioactive compound depend on its bioavailability and bioaccessibility in the gastrointestinal tract. This chapter focuses on the current knowledge of the functional properties of pineapple, as well the related health benefits attributed to its consumption.
