Revival of coconut oil production through the host oil immersion drying technique.
Oil extraction operations in Africa are handicapped by lowtechnology smallscale extraction and poor quality products from industrial copra crushing. Hot oil immersion drying of fresh kernels is a worthwhile alternative. The results of research carried out on this extraction technique are described including an understanding of the mechanisms involved, optimization of the process, a socioeconomic survey for adaptation of the process in line with user requirements, and the design of a pilotunit for smallholder use. The prospects for development of the process on different application scales are reviewed.
