Strain and composition of pediococcus damnosus, uses thereof and method for producing malolactic fermentation
[EN] The invention relates to two selected strains of Pediococcus damnosus isolated from white wine produced from the grape variety Caiño blanco, and to a combination of said strains that are able to cause the malolactic fermentation of a product, preferably wine or fruit juice. The invention further relates to a method for the malolactic fermentation of a wine or a fruit juice, and to the use of both one of the strains and the combination of the two strains, in addition to the use of the method, for producing a wine.
