Demand for information regarding the potential economic and financial performance of small-scale milk processing plants in the tropics, prompted the Small Scale Dairy Technology Group (SDTG) to write a book on the subject. Economic analysis of a small-scale dairy plant describes the various ins and outs of milk processing as simply as possible to enable the information given to be adapted to local situations. The guide is based on the following steps: making product calculations (amount of cheese and butter to produce); calculating the energy demand (also calculation of sustainable energy sources); calculating the costs; making a yield calculation; and doing a business estimate. As some of the calculations are rather complex the SDTG have developed a computer programme to assist in making the calculations. The programme is very easy to use and runs on any computer with MS DOS 3.3 or higher and is included on a disk which accompanies the book.
