Coffee and contamination by ochratoxin A

Preventing coffee contamination by ochratoxin A, produced by Aspergillus spp. and Penicillium spp., is a major issue for all stakeholders in the commodity chain. The introduction of a standard will have major consequences for producing countries: a loss of market share for some, a fall in the price paid to producers, and domestic consumption of contaminated coffee. Any new health legilsation should be backed up by steps to support eh adoption of preventive measures. A project led by the FAO is due to compile a list of preventive measures, taking into account socio-economic aspects. The multitude of factors which contribute to mould toxin development makes such measures difficult to define and enforce.
