Determinacao da microbiota associada externa e internamente a graos beneficiados de café
The microbiota of 7200 green coffee beans from 17 producing counties of southern Minas Gerais, was determined before and after desinfestation with 1 percent NaOCL. fungi were detected in 92.8 percent of the 3600 non desinfested green coffee beans and in 27.7 percent of the desinfested ones. When a county to county comparison was established it was observed a variation between them, concerning to internal invasion showing in some counties, a higher active fungal development and hence higher possibility of metabolite production. The present study suggest the necessity of researches aiming to detect fungal metabolites causing hazards to drinkability and safety of the product and to establish critical points during the yield and handling, where the contaminations can occur.
