UV-VIS spectrophotometric assays for palm oil quality

The accepted analytical methods for carotene level, anisidine value and ultraviolet (UV) absorbance at 233 and 269 nm, are discussed with recommendations as to improved procedures. Other methods which could be relevant to palm oil quality are presented, such as the measurement of non-polar trienes for monitoring deterioration induced by bleaching earths and the assay of conjugable oxidation products for the estimation of total oxidation levels. A new spectrophotometric method for measuring colour is described. In the paper, emphasis is placed on a discussion of the factors affecting precision and on the interpretation of the results obtained
