Determination of solid fat content of palm oil by wideline NMR
Wideline nuclear magnetic resonance (NMR) has been widely used in the oil and fat industry for the determination of solid fat content (SFC). Its use in the palm oil industry is comparatively new. This paper examines in detail the procedure of SFC determination using a Newport Analyser MKIII. The instrument settings and the procedure of measurement are described. Reasons for each instrument settings chosen are discussed. For routine measurements the settings chosen are gatewidth at 1 1/2 G, R.F. level at 45 mu A, A.F. gain at 375 units and integration time at 320 s. Triolein is used as reference and samples are prepared by pipetting (1.5 plus or minus 0.1 g). Both the stepwise (series) and direct (parallel) procedures are compared. The former gives higher SFC values. Direct procedure is preferred as it is more flexible and less time consuming. The reproducibility of the measurement and the calibration of the instruments are also touched upon. Finally, comparison with other makes of NMR spectrometer is given
