Choise of solvent for fractional crystallisation of palm oil
A quantitative treatment of glyceride solubility is developed based on regular solution theory and solubility parameters. An equation for the solubility of a pure glyceride in an organic solvent is shown to predict correctly the solubilities of triglycerides and monoglycerides in various solvents, including mixed solvents. From the theory, it is shown that the selectivity of separation of triglycerides by crystallisation is, in most instances, independent of the solvent, but that the selectivity of separation of diglycerides from triglycerides is very dependent on the solvent. Other factors affecting the choice of solvent for palm oil fractionation are discussed including polymorphism, absolute solubilities, mutual solubility and the end-use for which a particular fraction is required. Comparing acetone with hexane, it is concluded that hexane is a better solvent for producing a liquid fraction and acetone is a better solvent for producing a mid-fraction for use as a confectionery fat
