Effects of processing on the content and composition of tocopherols and tocotrienols in palm oil
The changes in composition and content of alpha tocopherol, alpha, beta and delta tocotrienols during fractionation and refining processes were studied by using a high performance liquid chromatography (HPLC) technique. Five sets of crude and fractionated products and eleven sets of samples at different stages of refining were received from various refineries. While palm oil and its fractionated products had the same composition, palm olein were shown to contain a higher amount and stearin a lower amount of tocopherols and tocotrienols compared to the corresponding palm oil. Alkali and physically refined RBD oils contained a range of 29 - 72 and 43 - 99 percent respectively of the total amount of these materials which had been present in the crude samples. This varying amount might be due to differences in processing conditions between refineries. Beta and delta-tocotrienols were found to be more easily lost compared with alpha-tocopherol and alpha-tocotrienol
