Economic engineering applied to the fishery industry

This manual analyses the micro-economics of the fish processing industry. It is mainly aimed at fish technologists, extensionists and managers and owners of small and medium-scale fish industries particularly in developing countries. The main topics discussed are: Production Engineering, Capital Investment Cost, Production Costs, Micro-economic Analysis of Production, Analysis and Selection of Alternatives, Profitability and Quality and Safety Economics. Procedures and techniques included in the manual can be applied to analyse: the feasibility of new investments, the performance of existing fish processing plants and process modifications. It contains a large number of worked-out examples and case studies. Although the manual adopts a classical approach, it shows how this can be integrated with the proper management of resources and the production of safe and quality fish and fishery products. Aspects, such as the need of proper management of resources like energy and water, and the impact of environmental concerns are also discussed. The primary purpose of this document is to serve as training manual; however, it is expected that it could contribute to the self-sustainability of the fishery industry in developing countries at a time that development can hardly be sought in the expansion of fish catches, but in the wise management of all existing resources.
