TASTING OF SPHENARIUM PURPURASCENS (ORTHOPTERA: ACRIDIDAE) AND COMADIA REDTENBACHERI (LEPIDOPTERA: COSSIDAE) BY PANAMANIANS IN CHAPINGO – TEXCOCO, MEXICO

Entomophagy is a cultural component in biodiverse countries like Mexico. Insects are rich in protein and other nutrients, being considered a healthy food alternative; However, this gastronomic offer is not common in Panama. A Panamanian delegation of 18 people (students, professors and professionals) visited Chapingo – Texcoco, so they were able to taste two species of insects: Sphenarium purpurascens Charpentier, 1845 (Orthoptera: Acrididae), known as chapulín, and larvae of Comadia redtenbacheri (Lepidoptera: Cossidae), locally called chinicuil. The aim of the study was to know the perception of these people after tasting insects. Using Google forms, an electronic survey was presented with three questions, of which the answers were that: 56% had not consumed insects before, 34% preferred chinicuil, 22% preferred grasshopper, 11% did not like any of them and 50% would eat insects again. In conclusion, entomophagy can be accepted by people with higher education in Panama.

Los insectos son ricos en proteína y otros nutrientes, siendo considerados una alternativa alimenticia saludable; sin embargo, esta oferta gastronómica no es común en Panamá. Una delegación panameña de 18 personas (estudiantes, docentes y profesionales), visitó Chapingo – Texcoco,por lo que pudieron degustar dos especies insectiles: el chapulín Sphenarium purpurascens Charpentier, 1845 (Orthoptera: Acrididae) y larvas de chinicuil Comadia redtenbacheri (Lepidoptera: Cossidae). El objetivo del estudio fue conocer la percepción de estas personas tras degustar insectos. Mediante formularios de Google, se les presentó una encuesta electrónica con tres preguntas, de las cuales se obtuvo como resultados: el 56% no había consumido insectos anteriormente, 34% prefirió el chinicuil, 22% el chapulín, 11% no gustó de ninguno y el 50% volvería a comer insectos. En conclusión, la entomofagia puede ser aceptada por personas instruidas a nivel superior en Panamá. Universidad de Panamá.
