Chitosan: antimicrobial activity and mechanisms of action

At the present, the restrictions on the use of synthetic chemical compounds in the production, processing and food conservation, as well as in human and animal health, have allowed a significant demand for versatile materials for use in these areas. Chitosan is a cationic biopolymer that, in addition to being a safe compound, has antifungal and antibacterial properties, characteristics that position it as an important material. The reports of the antimicrobial activity of chitosan date from the 80's; however, in vitro and in vivo studies show the importance of analyzing the new characteristics of this molecule. Also, in the last decade, various research groups have been given the task of studying their mechanisms of action, whose results have allowed the approach of various models, which are based on the interaction of chitosan with different cell targets.
