MATURITY STAGE AND POSTHARVEST LIFE OF RED RASPBERRY ?Autumn bliss?

Red raspberry (Rubus idaeus L.) in México is a crop in expansion, mainly for its export potential. However, its fruits have a very short shelf life (one or two days under normal ripening conditions) after harvesting. Red raspberry fruits are also susceptible to softness, rots and flavor changes. Harvesting at the proper maturity stage and lowering the temperature are good alternatives for extending shelf life during storage and transport. In this study, red raspberry fruits of cv. ?Autumn bliss? were harvested at four maturity stages: pink, dark pink, red and dark red; then they were stored for four days at 2 °C (90 % HR) and at 20 °C. Respiration rate, ethylene production, ratio of soluble solids concentration to titrable acidity (°Brix/acidity), color, firmness, and weight loss, were evaluated every day during storage. Red raspberry fruits showed a nonclimacteric respiration pattern. Refrigeration diminished changes of firmness, color and weight. The red and dark red fruits reached highest values of °Brix/acidity.
